John Dunstan, first became interested in researching the Derbyshire recipes when studying to be a Pastry Chef at Nottingham Clarendon College, after many years living in Australia.
John settled in the village of Turnditch, and began to regularly walk with the Amber Valley Ramblers Club, and soon found out that fresh, locally made traditional Derbyshire cakes and biscuits such as Buxton Pudding, Derbyshire oatcakes,Wirksworth Thor cake and many other historical recipes were not generally available in cafes or shops.
After research in the Derbyshire Local Records Office in Matlock, he decided to bring together as many authentic recipes as he could find and publish them, along with a history of the village or town that they are linked with, and some research into how the recipe originated. The book " Old Derbyshire Desserts"will be available for purchase from mid 2008 from Lulu.com.
